- 1 cup chopped chicken sausage
- 1 chopped onion
- 1 egg or as per requirement
- 1 red bell pepper, chopped
- 1 tbsp oil
- 1/8 tsp pepper
- 2 cups chopped boiled potatoes
- 2 tbsp chopped parsley
- Salt to taste
- Heat oil in a pan on a medium flame. Add the sausages. Cook for a few minutes and thereafter remove from heat and pour out the excess oil on a kitchen paper.
- Cook bell pepper along with onion in the same oil. Add pepper and salt to the same. Cover and cook for five minutes more.
- Don’t forget to add the potatoes and cook till the potatoes get heated through. You can mash the potatoes.
- Blend in the sausage and mix properly.
- Arrange on a plate after removing from heat.
- Add the simmered egg to the sausage plate or on top of the sausage mix or on top of the sausage plate. Sprinkle parsley and serve immediately with breads of choice.
